Grilled Chicken Caprese
With another big grilling weekend coming up, I want to share with you all a favorite summertime recipe. This recipe combines perfectly grilled chicken with the tastes of summer to form a Grilled Chicken Caprese!

Grilled Chicken–Indoors or Out
If you do not have a BBQ grill (or it is raining), you can always use a a countertop grill like this one. These indoor grills are great because you can set it and forget it. Plus, the meat is perfectly cooked!
If you do end up grilling outside, you do will want to make sure your chicken is cooked properly. The USDA recommends cooking chicken to an internal temperature of 165 degrees. You can always use a grill thermometer like this one to make sure you get there.
How to Get Perfect Grill Marks
To prepare your chicken to grill and get those perfect grill marks, the secret it to dry the meat. Pat your chicken breasts dry with a paper towel, then add your spices! The spices I use are: kosher salt, cracked black pepper, and red pepper flakes. If you do not like spicy foods, just sprinkle the red pepper flakes on lightly. If you want it spicy add more!
Once the grill is hot, it is time to cook! The next secret to perfect grill marks is to leave it be! Do not move the chicken around, just let it cook then flip once and cook to temp. How long you need to cook the chicken depends on how thick the chicken is. The thinner the cut, the shorter the cook time.
Grilled Chicken Caprese
When the chicken is finished cooking, now comes the caprese portion. If you are cooking on a bbq grill, put your mozzarella slice(s) in a single layer on your chicken. Then either cover with a metal bowl or just close the grill lid. You want to just warm and melt the cheese slightly. If your are using a countertop grill, you will need to use your oven to melt the cheese. Put the cooked chicken in a pan, cover with cheese and put in a warm oven to melt.
After the cheese is melted, add your fresh tomato slices, fresh basil and sprinkle with olive oil. (You can add balsamic glaze here too.) Those summer fresh veggies with the fresh mozzarella cheese puts this dish over the top!

Grilled Chicken Caprese
Ingredients
- 4 Chicken Breasts
- 8 oz Fresh Sliced Mozzarella Log
- 1-2 Large Tomatoes, sliced
- Fresh Basil
- Kosher Salt, to taste
- Fresh Cracked Pepper, to taste
- 1 t. Red Pepper Flakes, to taste
- Olive Oil
- Balsamic Glaze, optional
Instructions
- Pat dry chicken with a paper towel.
- Season with salt, pepper, and red pepper flakes.
- Grill chicken until internal temp of 165 degrees.
- Place cheese on top and melt
- Take chicken off grill, and top with tomatoes, basil, olive oil and optional balsamic glaze.
