Pork Chops & Pears with Gorgonzola Sauce
Pork chops have long been a favorite in this house, and historically, they have been prepared in a classic breading preceded by a session of shaking. So, in order to expand the pork chop repertoire, I started experimenting with the chops. This particular recipe was a result of staring at the frig one night and seeing pork chops, pears, gorgonzola cheese and some heavy cream then thinking,’ I wonder if these would taste good together?’ I am here to tell you, Pork Chops & Pears with a Gorgonzola Cream Sauce recipe is one that will having you wondering, ‘When can I have more?!?’
Bone-In or Boneless Pork Chops?
You may be wondering if you should use bone-in or boneless pork chops for this recipe. I have made it with both, and they both are good. However, after making this with bone-in pork chops, I prefer the bone-in because they did not seem to dry out as quickly as the boneless. That is my preference, though. If I had boneless in the frig, I wouldn’t hesitate to use them!

Cooking Pan
One-pan wonders are a staple in my daily cooking. While I enjoy cooking and do a great job of dirtying a ton of dishes when in my cooking zone, there are nights where there is too much else to do and a one-pan wonder is just the trick for a quick, simple, and delicious meal. Yesterday was one of those days.
An important part of this recipe is using the right pan. If you are using bone-in chops, it is especially important so you don’t scratch up a sensitive non-stick pan. If I am making two or three chops, I will use one of my anodized pans like this one. However, if I need more room, I will break out my beloved enameled cast iron pan. I love this pan because it is huge and cooks everything so evenly!
Pork Chops & Pears with Gorgonzola Cream Sauce
Pairing pork chops with pears then smothering with a gorgonzola cream sauce is one of my new favorite discoveries!
Ingredients
- 4 Pork Chops
- 1 T. Vegetable Oil
- Kosher salt, to taste
- Fresh Ground Pepper, to taste
- 1/4 t. Ground Nutmeg
- 4 Anjou Pears, sliced about 1/2 in thickness
- 2 T. Butter
- 1/2 C. Heavy Cream
- 1/4 C. Gorgonzola Cheese crumbles
Instructions
- Season pork chops with salt and pepper both sides.
- Lightly sprinkle nutmeg on both sides of pork chops.
- Heat oil in pan.
- Cook pork chops in pan until done. Cooking time will depend on the thickness of your chops, but aproximately 5-7 minutes each side until temp is 165 degrees inside.
- Remove pork chops from pan.
- Add butter and pears. Cook until pears are softened.
- Remove pears from pan.
- Reduce heat to low. Add cream and gorgonzola cheese to pan and stir until the sauce has thickened.
- Pour sauce over pork chops and enjoy!
