Pan-Fried Salmon & Apple Hash

20180921_182645[1]Mason Jars and Me’s 2018 Applepalooza continues with a tasty Pan Fried Salmon & Apple Hash dinner!

This week, I was craving a taste of salmon so stopped by the fish market on my way home from work and bought some beautiful salmon filets to enjoy that night.  I don’t think I’m alone when I say sometimes you have a craving for something, but you don’t exactly have a full meal in mind when you buy that craved item… Yeah, that was this salmon for me!

When I arrived home, I looked at my perfectly wrapped packet of salmon, then looked to my counters and frig for further inspiration.  Since we are in the thick of apple season in Maine right now, I had a bag of apples sitting on my counter, and that’s where this started.  As I kept looking, there were some red potatoes in the potato bin and some farm fresh onions…and there we have it!

The rich salmon paired with the sweet onions and apples balanced with the red potatoes makes for a wonderfully quick week-night meal! So without further delay, our 2nd installment for 2018 Applepalooza is….

Pan-Fried Salmon & Apple Hash

2 Salmon Filets

3 Small Red Potatoes, diced

1 Small Onion, Sliced

1 Medium Apple, diced (I used a Cortland)



Canola Oil (or your preferred cooking oil)

Chives, optional for garnish

  1. Preheat your  non stick skillet and add a tablespoon or so of canola oil (or your preferred cooking oil–I use canola here for the higher-smoke point it has compared to my regular olive oil).
  2. When the oil is hot, add the diced potatoes, sprinkle with salt and pepper and cook for 3-4 minutes until on side begins to brown.
  3. Then add your diced apple, cook for one minute.
  4. After your apple has cooked for a minute or so, add the onions.  Cook the hash on medium heat until the potatoes are tender and the onions are translucent.
  5. Once the hash is cooked, put the hash to the side in a bowl.
  6. Prepare your salmon filets by sprinkling with salt and pepper on both sides.
  7. Place the salmon skin-side down in the hot skillet and allow to cook for 5-6 minutes or until the skin is crispy and the fish is cooked half through.
  8. Flip the salmon and continue to cook for another 4-5 minutes or until the fish is cooked through and flaky (Cooking time will depend on the thickness of your filet. A thinner filet will require less time.)
  9. Once your fish is cooked, remove from heat and let stand a minute or two.
  10. Meanwhile, plate your bed of Apple Hash.  Add your salmon filet and possibly garnish with some chives!
