Fall Kale Salad–Easy & Delicious!

An easy and delicious Fall Kale Salad recipe which is good all year round!

Has the Fall busy season hit you all yet?? It has here! Every year, it seems like September comes and the world jumps into high gear until the first of the year. I absolutely love this time of year because it is a time full of friends, love, food and decor! Pumpkins, leaves, mums, apples… it’s ALL on my list this Fall! This means it is also the time of year for recipes which are quick, delicious, and health-ish. 🙂 In that spirit, I made this easy and delicious Fall Kale Salad this weekend which was an absolute hit!

Fall Season Salad Flavors

Flavors of the Fall season are often warm, comforting, rich, and crisp all at the same time. Caramel apples, pumpkin spice, thanksgiving… it all makes the Fall palate sing! So, when it came time to make this salad, I wanted to bridge the gap between the summer with a salad and the Fall with some of those yummy flavors.

Apples and cranberries are some of my favorite Fall flavors, so those were definitely on the ingredient list. But what about the rest of the salad…..?

How to Prepare Kale for Salad

I have another Kale salad recipe on the website that is delicious made with lemon juice massaged into the leaves so I took a cue from that recipe and squeezed two small lemons over the kale with a tiny bit of sea salt and just massaged the salad with my tongs for a couple of minutes. You can always just squeeze the lemon juice over the salad, but the massaging process helps break down the leaves a little so they are less fibrous and taste a bit sweeter. So, massage away and let your mind just rest a couple minutes as you prepare this easy meal!

Finishing the Fall Kale Salad-And a Gluten Free Option!

With the kale properly massaged, the next attendees to this Fall party were dried cranberries, a diced apple and roasted pistachio nuts. This trio is a no-fail for me… sweet, crisp, nutty, salty….yes, please!

Finally, the cheese! I chose to use a Gorgonzola with this salad to add just a bit of pizzazz to the bowl. However, if you are eating gluten-free and are super sensitive to gluten, Gorgonzola may not work for you. Just substitute some freshly grated Parmesan to this salad and it would be equally as excellent.

You can choose to eat this salad as is without additional dressing–which is what I did this week! Or you could take it up another notch with this zippy Lemon-Honey Vinaigrette! Either way, you are going to love this easy and delicious Fall Kale Salad!

An Easy and Delightful Kale Salad!

Ingredients

  • 1 Large Bunch Curly Kale
  • 2 Lemons
  • Sea Salt, Ground
  • 1/2 C Dried Cranberries
  • 1 Apple, diced
  • 1/4 C Roasted Pistachios
  • 1/4 C Gorgonzola Cheese Crumbles or Parmesan cheese for gluten free option

Instructions

  1. Wash and rough chop kale.
  2. Sprinkle lightly with sea salt
  3. Squeeze lemons over kale.
  4. Massage salt and lemon juice into kale leaves for 1-2 minutes
  5. Top with Cranberries, pistachios and cheese.
